
Okay, I'm getting my kids needs down to a science. Here is a recipe that the kids looooove. Maybe yours will too, I will post weekly, I'm setting up a blog called "Naughty Noo-Noo 4 Kids" Naughty Noo-Noo is the vacuum from Tele Tubbies. It's a way that I tricked my son's to eat string veggies, I had them suck them up like worms. IE: Onions, Zucchini Strips, Noodles and such ;)
~Kid’s love this because it’s a little sweet from the Hoisin, and if you make it fun they will love the veggies too!! Make it a game, I do.
Naughty Noo-Noo Hoisin Stir-Fry (2 kids + 2 Adults)
(No measurements in my house)
Ingredients:
White onion sliced in full slices, thin, so as they cook they become "Onion Noodles"
Mini Bella's (Crimini Mushrooms) sliced
Wild Mushrooms if you have them
1 bunch of spinach
4 garlic cloves crushed or minced (I crush them in the mortar)
1 tube of Egg Tofu or Protein of choice
Canola Oil
Tsp of brewer’s yeast (sneaky minerals)
Water (1/2 cup) more or less depending on how much sauce you want
Hoisin Sauce (2 tbls) very sweet.
Golden Mountain Soy Sauce (three squirts and shimmies) Thai Soy Sauce less sodium
Cooking Instructions:
In a large skillet heat the canola oil, toss in the garlic and cook the garlic to the oil is infused, I cook it a bit longer to get a little crisp on the edges. Throw in the mushrooms first, they take longer to cook, add the hoisin, water and golden mountain soy and stir fry for 3-4 min and then add the onions and spinach. I add the tofu in at the end; it’s an egg tofu, very tender and fragile and will break up if stir fried. I cut the tofu in slices (circles if tubed) and let it sauté for a few minutes.
For an additional note: My kids love the egg tofu scrambled in their eggs with Monterey Jack! Added protein. And my kids are not vegetarian we just eat 90% Asian cuisine.
